21 Day Fix No Bake Cookies

21 Day Fix No Bake Cookies makes about 24-30 depending on size, serving size is 1 large or 2 small depending on how big you make yours

1 cup natural peanut butter

3/4 cup honey

1/2 cup coconut oil

2 tsp vanilla extract

2 1/4 cup oatmeal, old fashion rolled oats

6 Tbsp cocoa powder

Melt peanut butter, honey and coconut oil in a sauce pan over medium heat.  Stir.  Once melted remove from heat and add vanilla, cocoa powder, and oatmeal.  Stir and drop by spoonfuls on parchment paper. Place in fridge to harden.  Enjoy!  Place extra cookies back in the fridge for later.

I usually make between 24-30 cookies depending on the size.

    1. I haven’t tried them with another oil. We use lots of coconut oil in our house because of the great benefits. Is there a reason you don’t want to use coconut oil?

    1. I am not sure how they would turn out with canola oil. I don’t use it. Sorry I couldn’t be more helpful.

    2. No. Coconut oil hardens to a solid when it gets below 76 degrees Farienheit. Canola oil will stay a liquid even when refrigerated. Your cookies would not harden and you would have no bake cookie soup.

  1. Hi! I was wondering if you’ve tried this with old fashion rolled oats opposed to quick oat like normal no bakes are made with.

    1. It depends on how many you make. Either 1 large or 2 small. Check the recipe 🙂 I can’t remember exactly how many I said I made.
