Today is our official first day back at school. We took a few days off over Christmas, but most of those days we were still doing some math flash cards and reading. This year we are studying different countries, our curriculum came with a fun geography game that the kids LOVE playing! I have to say they are really improving and I need to sharpen up my geography skills 🙂
We woke up to some fresh snow and it is still snowing. So I figured to kick off out first day of school in 2017, I would make a yummy breakfast for the kids and have a fire going. I have to say it is pretty cozy in here. Psst…I wish this picture was like those scratch and sniff stickers (remember those??) Yes, this looks amazing…but it SMELLS so delicious!
Baked Apple Cinnamon Oatmeal serves 8
4 cups old fashioned rolled oats
4 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 tsp baking powder
2 apples diced, about 2 cups
1 cup unsweetened applesauce
1 cup unsweetened almond milk
6 eggs, beaten
1/2 cup coconut palm sugar (or you could use brown sugar)
1 tsp vanilla extract
1/2 cup melted butter or coconut oil
Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray. Combine all the ingredients in a medium bowl. Mix well. Pour into the prepared pan. Bake for 30-35 minutes.
Portion Fix containers: per serving 1 yellow, 1/4 purple, 1/2 red, 1 tsp
Mix 2 Tbsp of plain Greek yogurt with 2 tsp of pure maple syrup. Sprinkle with cinnamon.
