Chocolate and peanut butter are one of my favorite combinations! I was trying to figure out a way to still enjoy both in a cookie while maintaining my 21 day fix meal plan. Well, I think I found a WINNER! They remind me of a brownie type cookie! YUM! I made these yesterday and the hubby and kids ate them as soon as they came out of the over. I was able to save a few for me during the week, whew! I love that I am making a healthier cookie for them as well…it is also a plus that it tastes great! Who wants to eat a healthier cookie if it takes like cardboard or worse? Not me! The recipe makes 24 cookies. Each cookie is 2 tsp on the 21 day fix. They are so amazing that it will be hard to not eat them all at once. Or in my case have the family eat them! I like to store them in the refrigerator just so I am not tempted looking at them on the counter. (Plus they are out of view/reach of the little ones!) I have not tried to freeze them since they don’t last long around here, but I would think they would freeze well. Let me know if you do try to freeze them.
21 Day Fix Chocolate Peanut Butter Cookies, makes 24 serving size 1 cookie
1 cup natural peanut butter (make sure it does not have sugar added)
1/2 cup raw honey
1/4 cup cocoa powder
Preheat oven to 350 degrees. Mix all ingredients well in a mixing bowl. The batter will look like brownie batter consistency, don’t worry they will turn out great! To ensure the correct portion size, use a tablespoon to measure out each cookie. Drop on a parchment lined baking pan. I use my silicone baking mat on my baking sheet. Make sure you space them out about 2 inches. Bake for 10-12 minutes. Let cool on the pan before you take them off. Enjoy!
