Pumpkin Energy Date Balls

When I was a kid, my Mom would make Date Balls every year for Christmas. I remember she would store them in the freezer so we wouldn’t eat them all at one time. But I would sneak one out of the freezer when I went to get something out of the freezer for her ­čÖé I don’t remember all the ingredients in her recipe, but I am sure that they weren’t as healthy for you as these.

I was a bit skeptical of this recipe until I tried it finally….THIS week! Good thing or else I would be eating them ALL the time! I store them in the fridge, but I am thinking they would be great frozen too!

Pumpkin Energy Date Balls, serves 16 (adapted from Fixate)

1 cup pitted dates (I used Fancy Medjool Dates)

1/2 cup raw walnuts halves

1/3 cup canned pumpkin puree

1/4 cup unsweetened coconut flakes, reserve small amount for garnish

1 pinch of sea salt

Cut the pits out of the dates and set aside.  Place walnuts in food processor; pulse until finely ground. Add dates, pumpkin, coconut and salt; pulse until well mixed.  Place in a medium bowl.  Refrigerate, covered, for 30 minutes.  Roll into tablespoon-sized balls; roll in reserved coconut, if desired.  Store in an airtight container in the refrigerator.
