Sweet Potato Pancakes

Sunday’s are great for Pancakes! I actually “accidentally” made this recipe! I have some extra roasted sweet potatoes that needed to be used up, so I thought why not combine some sweet potatoes and eggs! Yep…these are just 2 ingredients! (You can adjust the spices according to your taste.)

Sweet Potato Pancakes, serves 1

1/2 cup sweet potato, roasted & mashed
2 eggs, beaten
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/8 tsp ground cloves

Topping:
1 Tbsp plain Greek yogurt
1 tsp pure maple syrup

Directions: Heat a griddle pan and spray with coconut oil. Beat the sweet potato and eggs together. Add the spices and stir. Drop batter onto the hot griddle pan. When the pancakes have small bubbles on them they are ready to be flipped. While the pancakes are cooking, mix together the topping. Top pancakes with the faux whipped cream and sprinkle with cinnamon! Enjoy!
